Fats and Fatty Acids Fats are generally composed of glycerol and fatty acids. The fatty acids in our diet typically have carbon chains of fourteen to twenty-two atoms. A single bond between two consecutive carbon atoms is always sufficient to form a chain. Each carbon atom has space for two hydrogen atoms. The fatty acids formed in this way are presumably saturated. Unsaturated fatty acids do not contain the maximum number of hydrogen atoms.

The reason lies in the double bonds between carbon atoms. Fatty acids with two double bonds are called monounsaturated fatty acids and fatty acids with two or more mobile number list bonds are called polyunsaturated fatty acids. A molecule is a fatty acid if the double bond from the end is present between the third and fourth carbon atoms. If the bond follows only six carbon atoms we say a fatty acid. Polyunsaturated fatty acids are widely found in vegetable fats. More than half of corn oil or sunflower oil consists of fatty acids mainly in the form of linoleic acid with eighteen carbon atoms and two double bonds. Polyunsaturated fatty acids are abundant in fish.
